A Taste of Summer in the Dead of Winter

 While in Utah normally around this time of year we find ourselves shrouded in what could adequately be called a frozen wasteland covered in layers upon layers of packed snow and ice, this year has been unusually warm. (Up to a  balmy 51 degrees some days.) Global warming at its finest, but  that's a subject for another entry. With all of this warm weather however I'm reminded of a late summer evening where the sun is just starting to set and a cooler than normal breeze causes you to crave something on the warmer side of things.

For as long as I can remember, my appetite and cravings have always been fueled by my environment and the weather around me at that particular point in time. The weather right now is saying something hearty and satisfying, yet still really light and refreshing. (It is still the beginning of January!) When I'm confronted with such a dilemma as wanting summertime food in the middle of winter, I have wrack my brain in order to come up with a menu that is both light and filling with that little glimmer of summertime lingering there in the background. Seasonality is the key factor at play here. You simply can't go into the market and expect to find the same produce that you had during the summer and have it taste the same. It just doesn't work that way. However, all hope is not lost. With just a few simple substitutions you can find that taste of summer in the dead of winter.

My Winter Fruit Salsa and Chicken Mole Tacos follow these substitution rules quite nicely I've found. For a little something extra and to round out the dish I added some crispy baked sweet potato fries!
